Yummy Munching Snack


Hi All Dear Friends

New session of schools are started... Now days school reopens in mid of June only.... not like previous days when I was in the school ..that time on 1st July all the schools opens... everyone will be seen in new uniform walking on roads.. or with dad on sccoter or in rickshaws... etc... but now a days... all the school opens before july... more burden on kids :(

When I was a kid ... me and my sister.. are really exicted when new tenure starts in july... my father takes us to bag shop to get a new one.. we search for waterproof bage there ;)... then new bottle ..new tiffin.. so much fun... :) :)... The main excitment was new stickers... so many different types of stickers were available in the market .... it was a tough to select one... as all looks tempting.... The fresh fragrance of new books... pages...copies... can't be defined in words :) :)... I know by reading all this you would have gone in back to your childhood days :) :).... now we left with only good... memories which bring smile on our face...

When we come from school... we have food and then my mom makes us sleep for at least 2hrs... Once we get up .. then me and my sis study..around 5-5:30 pm... we both feel hungry... not much... to eat a heavy thing... but feels to have some light snack..or somthing to munch... our mom was very well aware of this munching ... So she always keep something prepared for us  :) :).. love you mom.. you made our childhood worth to remember... god bless you :) :)...

Ohh.. this all things made me senti...I miss all those.. never mind.. So our today's topic of blog is realted to this short hunger... A yummy Snack that you can munch for these small humger :): ) ... As I am newly married... not have kids.. but my hubby also behaves in the same way ;) :)... Once he comes from office he wants something to eat... so I also need to thing for new Ideas... So todays Recipe is Yummy Munching...


Ingredients  :-

1 + 1/2 cup rice flour
3/4 cup all purpose flour or maida
1 cup curd
3 tsp sesame seeds
1 tsp carrom seeds
salt to taste
2 tsp red chilly powder( you can add less as per your taste)
1/2 tsp cumin powder
2 tsp ginger garlic paste(this is optional... if you don't loke garlic you can avoid it)
water to need
oil to deep fry

Procedure :-

In a bowl mix all ingredients in a bowl.Try to make a dough with minium water.LEt it rest for 15-20mins.Then make samll balls of dough.With the help of rolling board and rolling pin , roll the ball as chapati.. 




Then with the fork make holes on the chapati..so that it does not rise... With the help knife cut in the shape of your choice.



Heat the oil , depp fry them on meduin-high flame... till they become crisp... take out on paper towel.. and then once cool down put in air tight container... It will remain good for a week... Enjoy them with a cup of tea..or like that only any time :) :)

Khandvi

Hello Everyone :) :)

Sometimes we think that somethings are there that we will not able to do... like for some swiming is a fear... for some people dancing is not a good to have in there plate..some hestiate from cooking some dish... some get fear of stage...etc... Many times we are not able to come up to fear of not able to do... but in some case we try and get out of our own fear...

Now you would be thinking what I am talking about :) :)... don't worry I am not writing any philosophy here.. just discussing the real life things we face... Today I came out from one of my fear and also result came in flying colors.... Thinking now what I am talking about.... Khandvi a famous savory snack of Gujarat... I always like it and ate it... but never ever tried to attempt it..due to fear... that I will noe ablt to make it... It wil not come out well from me...

In India..anytime I carve for it..just go to shop and get it... but now things got changed... now I am in US and here getting such things a not easy.. even in Indian Restaurant you will not get such types of snacks.... And 2-3months I was carving for Khandvi... but was making myself to control... till I go to INDIA... but these desires can't wait more... So finally I thought of making... And guess what.. in first try it cam out very well... I was not able to believe that atlast I made it :) :).... Was very happy with the results... 




Khandvi is mouthwatering traditional Gujarati Snack.These are yellowish tightly rolled bite sized pieces made of garam flour and yoghurt and seasoned with sauteed sesame seeds and some other spices.Its readily available all over India now... Everyone likes it... Khandvi can be made in microwave and on gas.. Today we will make it on gas... So lets Start it :) :)

Ingredients:-

1 cup besan or gram flour
1 cup fresh curd or dahi
1 and half cup of water
2 tsp ginger-green chilli paste
1/4 tsp turmeric powder or haldi
a pinch of asafoetida or hing
salt to taste

For Tempering or Tadka :-

4 tsp oil
1 tsp mustard seeds 
5 to 6 curry leaves (kadi patta)
3-4 whole red chillys
2 tbsp grated coconut
2 tbsp finely chopped coriander leaves

Procedure :-

Mix the besan ,curds-water mixture ,ginger-green chilli paste, turmeric powder, asafoetida and salt in a bowl.It should be done properly inorder  to avoid  lumps.Then transfer the mixture in a deep non-stick pan.Cook on a slow flame while stirring continuously till it becomes thick.It will take 10-15mins.
Grease a thali with oil on the reverse side and spread a spoonful of the batter on a greased thali and wait for a few seconds and try to roll up. If it doesn’t, then cook for a few more minutes, and check once more till done.Divide the batter into two equal portions. While the batter is still hot, spread each portion evenly using a spatula, on the reverse greased side of 2 thalis evenly to make a thin uniform layer using a spatula.When cool, cut the khandvi on each thali lengthwise into equal portions and roll up each gently.

For the tempering, just before serving heat the oil in a small non-stick pan and add the mustard seeds.Once the seeds crackle, add seasme seeds,add the curry leaves and red chillies and sautΓ© on a medium flame for a few seconds.Then slowly pour the tempering over the khandvis such that every khandvi got the tempering on it.Serve hot garnished with coconut and coriander.

Fusion Biscuits

Hello Everyone

Ramadan mubarak :) :) to all...May this holy month bring happiness..love... blessing for all :) :)... As there is begining of festive season... many memories pop ups in mind... yummy sweets... so  much fun with cousins and frnds.... new dress... lots of and lots of dhamal :) ;)... all agree with me na... on this note :) 

Bachpan ki baat hi alag h... the way we play... we think... in everything we do there was little innocence... but as we grow up we able to understand things.. and then we manipulate ... and then it doesn't remain as orginal ... but no one can stop time... we need to go ahead.. only we can do is.. always let the child inside us remain alive.. then sure we will be a good person and will enjoy everything as we did when we were small :) :)

You people would start thinking that why I am talking like these...becoming senti... don't worry we will talk wbout today's recipe also... Was just gone back in memories... sometimes it would also happens with you all... ok ok.. will stop these now.. and lets talk about todays recipe... As Ramadaan begun.. so thought to make something sweet to welcome this holy month..So baked these Fusion Biscuits :) :)...  



This name I only gave to these biscuits...as its a combination of vanilla and coco... so thought this name perfectly suits it.. This was my first try to these biscuits.. and really guys it came out awesome and perfect as I thought :) :)...

My hubby was asking me again and again how I made like this ;) :)... how I joint the two things... I told him this the maggic man ;) :) ...frnds also liked the taste and the shape... So lets start with this ....

Ingredients :-

1 and 1/2  cup All purpose flour or Maida
½ cup of powdered sugar (you can add more if you want more sweet)
½ cup of chopped cashew nuts or almonds or walnuts or mix of all
1 long cube of butter or 3/4 cup 
½  tsp cardamom powder
1 tsp vanilla esence
2 tsp of coco powder
2 tsp of hershyl's chocolate syrup (optional)

Procedure : -

In a bowl add melted butter...(butter should be at room temperature) and sugar.Blend it well with blender till the mixture looks soft.Once done add chopped nuts, cardamom powder and vanilla esence.And again runs blender once.Then add the flour to the mixture.Slowly mix the flour and butter mixture with ur hands... such that butter deeply mix with flour... try to bring them together...Divide the mixture in to two parts...in other part add the coco powder and  chocolate syrup and mix it well.. it will be a soft dough.. Taste it... if you feel you need to add more choco you can add...  If you think it is too liquid type you can add some more flour.. but remember one thing we need soft dough which can be handled but not like chapathi dough... 

Once done grease a polythene bag by cutting it from between ... (poly bag in which lentils or cashew nuts come and which is not thin as a normal polythene)...And place the vanilla dough in it ..try to make it like rectangle shape... apply some butter on one side ... and  place the coco dough near to rectangle chocoalte dough ... add by pressing it..so that both the doughs get joined.. Then tightly cover the polythene..such that the rectangle shape doesnt get destroyed... with the help of salo tape or thread tied it ... and keep in freezer for 1/2 an hour and the in freeze for 1/2 an hour... 

Preheat the oven at 180 degrtee celsius.Once 1 hour over take out the roll.And with the help of knife cut it into a desired shape and size... Then in baking tray place a parchment paper and then arrange the cookies with a half inch space as they will expand while baking.Bake it for 12-15mins... Once good from down side take out and let it cool on tray for 5-8mins and then transfer into wire rack to cool.It will be soft from between once you took out from oven... but as it will cool down on rack it will become hard and as we want.

This biscuits will be good for atleast 15days in air thight box... Enjoy with coffee or tea..or like that only... hope you all like this biscuits... Do let me know your experience :) :)

Bread Uttapam


Hello all lovely people 

Today is my 13th post in the blog.Hope all of you would be enjoying this journey of cooking with me.Day by day viewers are increasing in the blog :) :).. I am happy and glad to see such response to my blog...Never thought one day I will be writing a blog and that too a recipe food blog :) :)... As an I.T engineer I never thought will be involved this much in cooking... But as who knows destiny had written what for us in our life book :) :).... 

Before going to today's recipe I want to tell something to you all... I am able to see a huge response on my blog.. daily many people from different countries are reading the blog... Thanks to all :) :)... I just want to say that don't be a silent reader... I will appreciate if you comment or give suggestions ..It will give more confidence and a push to me to write more yumy and easy recipe for you all.. Hopping now I will Listen from you all soon :) :)...

Few days before I discussed a yummy BREAD CHAAT.Bread is mainly lying in our kitchens... Generally we prepare either sandwich or bread upma... Sometimes we need to throw as it is as no one wants to eat and soon it get expired... but now no more wasting of bread... here is another quick recipe with bread... Today will prepare BREAD UTTAPAM :)..
UTTAPAM is a South Indian traditional dish which is prepared by rice and lentil.Its required at least one day preparation... But not to worry these Bread Uttapam are easy and quick to make... and delicious too.... :) :)... So let's start with it...

Ingredients :-

1 cup of rawa or semolina,
1/2 cup of maida or all purpose flour,
6 slices of bread crushed into crumbs,
salt to taste,
finely chopped green chillys,
finely chopped onions,
1 grated carrot,
4-5 curry leaves,
Corainder leaves,
oil to cook,
1 cup curd,
pinch of baking soda and water.

Procedure :- In grinder mix rawa , maida , curd , salt , curry leaves and some water to make the batter.Then in a bowl mix bread crumbs and liquid batter with baking soda and salt as per your taste. Heat a pan and sprinkle some oil.Then make uttpams of your choice size.Once you pour batter sprinkle chopped onion , carrot , green chillys , corainder leaves and some oil on corners.Cover the pan with lid and cook on medium flame.Once done on one side flip the uttapam.And this time without covering cook the other part.Serve hot with any chutney of your choics and sprinkle some chat masala on uttapam veggies side...






Bread Uttapams are good to eat hot.Hope you all will like this recipe...:) :)

Khaman Dhokla


Hello All

Its raining at my place since morning .... and very nice weather... everywhere greenery and the pleasent smell of soil.... what else you need to start monday :) :).... Hope everywhere monsoon had stepped in... I love to sit at home in monsoon in balcony or near window and watching the drizzles of water... with a cup of hot tea.. and some yummy hot tangy snack... :) :)... 

Last time I shared a healthy snack good to go with tea i.e Poha Cutlet .... Today will continue the same topic with a new dish "Khaman Dhokla"... or simply "Dhokla"... Its a well known Gujarati Snack..But now its not limited in Gujarat..Everywhere its a well famous snack... Kids ...Young people..Teenagers or Adults.. everyone jst love to eat Dhoklas with a  mint coriander and tamarind chutney :) :).. With some Sev on it... Many stalls of Dhoklas you can find on streets in INDIA....  Also Dhoklas are easy to digest... that is another plus point in this snack.... Even in very less amount of oil is need to temper... again a healthy snack for cholestrol people...



We can prepare Dhoklas in many ways.. Like some prepare with gram flour... some prepare with Semolina... Some prepare with Rice and Dal flour ...etc... But trust me all test awesome :) :)... Today here we will discuss a Dhokla prepared with a mix of gram flour and semolina... So let's start with the Dhoklas .... 

Ingredients :-

1cup semolina or rawa, 
3/4 cup garm flour or besan, 
salt to taste , 
1/2tsp baking soda or 2tsp of Eno, 
6-7 green chilly, 
1/2 cup of chopped coriander leaves, 
1 + 1/4 cup of curd, 
mustard seeds, 
2-3tbsp of oil, 
3 dry red chilly, 
10-11 curry leaves,
1 tsp of sesame seeds

Procedure :-

Combine garm flour , rawa , salt and curd and mix it wl to make a lump free batter.keep it aside for 1 hour.Then steam a vessel.When done grease the tray with oil.Mix baking soda to the batter and give a quick stir.You will see tht the mixture will beome fluffy.Soon put the tray for steaming for atleast 20mins.Check in between by inserting a tooth pick.If it comes out clean dhoklas are done.Once done let it cool down before removing from tray.In a pan add oil.Once it is hot add mustard seeds, green chilly and red chilly and then Curry leaves.Once green chilly done at the end add white sesame seeds and switch of the flame.Stir the mixture 2-3times and then pour the mixture on dhokla.Serve hot with chutney of your choice...

Poha Cutlets


Hello Everyone

Hw's everyone :) :).... Enjoying Pre monsoon showers now :) :)... After so hot climate everyone would be happy by seeing the tiny droplets of rain started falling... Its gives immense pleasure to see the first monsoon.... and how can I forget here to mention the fragrance of soil... Really that first pleasant smell of soil is very nice to feel :) :).. I guess many of you agree with me :) :)

In rainy season mostly each one of us feels to eat something hot or tangy in taste.Eating outside in monsoon is not a good call now days.As you know this particular season probability of getting infection is more form outside food.So in order to full fill our these eating desires the best option is cook at home :) :)... Yummy tasty and also pure and hygienic...  What say guys :) :)... I know your are shouting YES YES YES :) :)...So today we will make one yummy dish .. which will be healthy also and suitable to rainy season... POHA CUTLETS 

Poha or Flattened Rice is a beaten rice.Easily available in any Indian Grocery Store. Poha Cutlet is a yummy Snack can be served in party or get together.Serve hot with green and tamarind chutney.Kids will also love it.Poha is rich in iron also.So good for everyone.With a cup of tea these cutlets go very well.So without wasting any time lets prepare these cutlets.

As I told you we are preparing a healthy version of Poha Cutlets , I am not using Potatoes here,Mostly in cutlets Potatoes are used.But for weight conscious people these is for you all :) :)

Ingredients :- 

1 and 1/2 cup of soaked poha or flattened rice,
3/4 cup of soaked mong dal or  Yellow gram for at least 1 hour,
3-4 green chilly,
salt to taste ,
1/2 teaspoon cumin powder, 
3/4 cup of crushed roasted peanuts,
1/2 teaspoon red chilly powder,
1 teaspoon chat masala

Procedure :- 

Blend the poha , dal and green chilly in mixer.Then take out the paste in a bowl add all the other things mentioned above and make the cutlets.In a pan put some oil and shallow fry the Cutlets from both the sides.

Serve hot with some chat masala on it with chutney or sauce...



So as you have read above its just a simple and easy to make recipe with all the readily available ingredients in the kitchen :) :)

Spinach Steam Muthia

Hello Everyone

Now a days everyone is more conscious about health.Mostly avoid fried and oily foods.Prefer to eat normal healthy food or fruits.For such people today's blog will bring smile on face :) :) .... Yes today we will discuss one such recipe which is non fried and healthy...

Muthia is very well known Gujarati snack.People love to eat as a tea time snack.It is prepared in many differnet ways.. i.e with different vegetables like Spinach Muthia , Spinach Fenugreek leaves muthia , Bottle Gourd Muthia , Cabbage Muthias etc.Muthia is a very easy way to incorporate the green veggies in our diet in a healthy way.Also it taste awesome and much better than normal cooked curries of these veggies.For kids also this is a very good and healthier option to make them eat such veggies.

So lets make today Spinach Steamed Muthia :) :)

Ingredients :-

1 cup Whole wheat flour 
1/2 cup Chickpea flour/gram flour 
3/4 cup Handwo flour (Mix of rice flour , semolina and Chana Dal Flour) or use store brought handwo flour
1/2 cup Rice Flour 
1/2 tsp Turmeric Powder
Spinach 2 cups washed and chopped
¼ tsp Asafoetida
¼ tsp Baking soda 
½ tsp Cumin powder 
1 tsp   Sugar 
1 tsp   Ginger paste
3 tbsp Curd
2 Green chillies chopped finely
1/2 cup Coriander leaves chopped finely
1/2 tsp Red chilly powder 
Salt to taste
1 tsp Oil 
Water to form a dough

For Tadka or tempering

3tsp oil
1 tsp mustard seeda
2tsp sesame seeds
5- Curry leaves
1  whole dry Red Chilly

Procedure :- 

In a bowl mix all the ingredients and make a dough.Water to be added to form a dough only if needed.In a steamer put 4-5 cups of water and make it boil.Grease the tray with oil and pour the batter in it as we do for dhokalas.Or in other way as I did, I used the idli pot to steam the Muthia.Grease your hand with oil and make the muthia in the shape of idli.Grease the idli moulds and keep the muthia in mould.Steam it for 20-25mins.Check it before closing the knob by inserting the toothpick in muthia.If it come out clean its done otherwise steam for sometime more.




Let it cool then cut into pieces of desired shape.In a pan heat oil.Once hot add mustard seeds and let it splutter.Once done add red chilly,curry leaves and sesame seeds.Then add muthias.Mix well and cook for 2-3mins.Garnish with coriander leaves.Serve hot with mint coriander chutney or Sauce of your choice.




Note :- 
1) One can eat steam muthia without tadka also :) :).
2) If you are using storr brought Handwo Flour then don't add baking soda as it will already come in market pack.

Radish Carrot Mix Paratha

Hello Everyone

As you all might be knowing that Mix Parathas with different Veggies are so common in India.Different combinations are made to make the different taste like for example... Potato Onion , Panner Capsicum , Radish Carrot , etc.Also by making combination it will help us to have a variety in our lunch or dinner.Even changes our tongue taste :) :).So, today we will make the yummy and tasty combination i.e Radish Carrot Mix Paratha...

Radish and Carrot both are very healthy for body.Mostly kids even adults dont like to eat raw this veggies.So this mix paratha is good way to make them eat.In winters this both veggies are readily available.There is very simple recipe to prepare this parathas... Lets start with it :) :)

Ingredients :- (for 2 people)

1 Radish washed,peeled and shreded
2 Carrot meduim size washeh,peeled and shreded
1 onion finely chopped
2 green chillies finely chopped
1 tsp red chilly powder
1/2 tsp cumin powder
1/2 tsp coriander powder
3/4 tsp amchur powder
1/4 tsp turmeric powder
1 tsp Chat masala
1/2 cup chopped coriander
salt to taste
oil to roast the parathas
1 cup wheat flour
water to form dough

Procedure :-

Squeeze the excess water from radish and carrot.Mix all the things together to make stuffing except water and wheat flour.Now form a dough by wheat flour + salt + 1tsp oil + water.Rest the dough for 20mins.Now with the help of rolling pin and rolling board make a small chapati and fill the filling as shown in picture below.I you want you can sprinkle Chat masala after adding stuffing in paratha.




Then make a ball by covering the edgesand roll the chapati.



Roast the chapati by applying oil on medium flame from both the sides.Enhoy hot with chutney or curd :) :)

Sabudana Vada(SAGO VADA)

Hello All

In India there are many religions.And in every religion there is one important ritual that everyone performs known as FASTING or UPWAS or VRAT... There are different festivals on which people fast means they will not take normal food which we eat daily.Either they take fruits , milk , sweets or some other food item which is eaten specially in FAST.The main ingredient which is very common in INDIA in fast is Sabudana ...in english its known as SAGO.We can make Sabudhana Khicidhi or Sabudana Vada or Sabudana kheer.... They all taste awesome...

Today we will here Discuss about Sabudana Vada.It is a traditional deep fried snack from Maharashtra.They taste yumm and out of the world.I remember in my childhood, I do fast only to east these delicious fried dumplings of Sabudana and potato.My mom make normally also these vadas... I mean to say on normal day... as I like it so much... Mom's love cant be beaten by anything in the world :) :) ....

So lets start with making of these yummy Snack :) :) 

Ingredients:-

1cup sabudana soak for around 4-5hrs, 
2 boiled potatos , 
1/2 cup of Singhara flour or Water Chestnut Flour, 
6-7 chopped green chillies , 
roasted cumin powder, 
salt to taste , 
Chopped corinder leaves ,
red chilly powder if u want spicy, 
1 cup roasted crushed peanuts,
oil to fry.

Procedure -

Mix the all ingredients well.Make pattis as shown in figure nd then deep fry it.If you are feeling difficulty in making pattis apply some oil in hands and then make.Take out on paper towel.nd serve hot wil curd or any green chutney.







NOTE :- Singhara flour is optional.It is use for binding.U can use more potato for binding if u dont want Singhara flour.Its also used in fast.

Tea Time CAKE

Hello Everybody

Welcome back to a new energetic week after a lazy weekend :) :)....  Today will talk about the evening time when we have a light hunger .... we try to find the option what we can eat with tea... but that should not be heavy so that we can have dinner.... there are many recipes which are desgined specially for TEA TIME small hunger :) :)..Some people prefer hot oily fitters and some people prefer some cookies or cakes or any light munching thing....

So after this small discussion about tea time hunger you all would have got a hint of today's post of mine :) :)... Yes you all are thinking in a right direction... Today we will make a CAKE which suits totally for the evening TEA TIME.... Soft Spongy Eggless Orange Flavoured CAKE.... When my husband come from office he wants to have something to eat that time...but it should not be oily and it should not be heavy... otherwise he will skip the dinner... So this is the perfect treat for him and the people like him... :) :).. Cakes are generally loved by everyone all around... Kids , young people and adults ...I mean in every age person loves the cake... and if its freshly baked just came out of oven... Nothing more tastier than it :) :)... I hope many people who are reading this blog will be agree with me... Here in this cake , just to give flavour of Orange I am using Orange juice and zest.. You can add mango or any other fruit flavour of your choice.... or just dont add any fruit flavour then it will be simple Vanilla CAKE.......So lets bake a yummy cake today :) :)




Ingredients :-

3/4cup all Purpose Flour(Maida),
3/4 cup Semolina (rawa) 
1 tin milkmaid or sweet condensed milk 
1 teaspoon baking powder and half teaspoon baking soda 
2teaspoon orange zest and 2tablespoon orange juice
150 grams butter 
2teaspoon vanilla essence 
some chopped nuts of your choice
2-3teaspoon sugar.

Procedure :- 

In a bowl add condensed milk , butter and orange juice.Mix well till the mixture looks fluffy and good.Then add orange zest and vanilla esence and mix again.In another bowl sieve all dry indegredients.Then add all thr dry indegreidents to another bowl of liquid indegredints.Give a quick mix.When everything mix well.Taste the mixture once if u feel sugar less then add sugar as per your test.pre heat thr oven at 180degree celcisus.Grease a baking tray with butter and dust some all purpose flour.Then pour the batter in the tray.Gransih with dryfruits of ur choice.Bake it for 40-50mins.Check the cake in between.

In the OVEN

Enjoy hot or cold any time.U can keep the cake for one week in air tight container and enjoy with TEA.

This is a healthy version of cake as we took All purpose flour in half quantity ... we add semolina ..

NOTE : - You can avoid the Orange zest and Juice.Then it will be simple Vanila CAKE :) :)...

DAHI VADAS

Hello All

How was the weekend for you all :) :).... hoping it was wonderful for all... For me it was good this time ... a good day at beach and then in evening a nice get together with friends and of course yummy dinner :) :)... Yesterday I promised with you all that once potluck will be done I will share the recipe of the dish I prepared ... So lets open the Box and let me tell you what I prepared :) :)...

DAHI VADA .... Its a very famous CHAAT of India which can be eaten as Snack or as a part of the meal.Its also a festival favourite of people.Even in wedings you will mostly find DAHI VADAS as included in buffet.This is also famous with a name DAHI BHALLA :) :)... It can be eaten in any season and any time.

Its just a easy to prepare and such a yummy tangy to taste.I guarantee you everyone will like it in your family and will tell you to prepare again and again :) :).... "No one can eat just one"....Even you can prepare the Vadas before and keep them in freeze and when time to serve you can add curd and other toppings and serve fresh :) :).. VADAS are good to keep in freeze for 3-5 days... Now after reading these much about this Snack.. you will be waiting to know how it will be prepared... So lets see the procedure now..

Ingredients :- 

1 + 1/2 cup Split Black Gram( Urad dal)
1/2 cup Split Green Gram ( Moong dal)
1 small piece of ginger
2 medium size green chillys
a pinch of baking soda
1/2 tsp of salt
oil to fry
water to soak vadas
1 big bowl of curd or yoghurt
red chilly powder , cumin powder and salt to sprinkle
tamarind Chutney 
some chopped coriander leaves

Procedure :- 

Soak both the lentils together for 4-5 hours in water.After soaking done grind the dal along with ginger and green chilly.Add very less water while grinding as we want a thick paste to fry the vadas.Once grind take out the paste in a bowl add salt and pinch of baking soda to the batter.Heat the oil in medium flame and fry the Vadas till like brown.Meanwhile Vadas are frying in another pan heat some water in order to deep Vadas in that.After Vadas are fried , take out in a plate to soak extra oil by tissue paper.Then soak the vada in warm water for 15mins.After 15mins take the vada between the palms and squeeze the water from Vada and keep in a bowl.Do like these for all the VADAS.Now when you need to serve take a serving plate, keep 2 vadas in it.Then add curd in the serving plate such that vada are fully dipped in curd.Then put a teaspoon or more tamarind chutney.Then garnish the vadas by sprinkling the red chilly powder , cumin powder and salt.At the end garnish with some chopped coriander leaves.

Eat yummy tangy Dahi vadas with friends and family :) :)

Mango Delight

Hws weelend going on ????? Fun and full on masti .... Me went to a beach with my hubby today... enjoyed the calm and serene nature there... and in evening there is potluck at my friend place....So after this blog need to do preparation of potluck 😊.... What I will prepare today will post tomorrow :) :) for all you guys...

As you all know till now we made cake ... Chaat and healthy Parathas... so now its time to enjoy some yummy ... sweet... Mangoes are in season... so lets make a sweet with mangoes.... The King of Fruits :) :)

Mango is a sweet fruit with a big seed inside.There are lots of varities of mangoes available in India.And so many types of sweet dishes are prepared by mangoes.Even my favourite fruit is Mango....Here is US its less available and costly also...... but its okay... jitna mile usme hi enjoy krlenge ... Today will make mango burfi or known as Mango Paak in hindi... Its a yummy light.... dessert... lets start with it....

Ingredients :-

2 mango pulp
2 teaspoon of ghee or butter
2-3teaspoon sugar ( depends on the taste of sweetness u like)
3/4 cup milk
more than a half cup of cruhsed coconut
3 teaspoon milk powder (optional)
3/4 tin of milkmaid or sweetned condensed milk
less than a 1/2 teaspoon of cardmon
3-4 strands of kesar dipped in warm milk
Some crushed almonds and rasions.

PROCEDURE :-

Heat a pan and add ghee and coconut.Stir it till coconut becomes little brown color.Then add milk and heat the milk.Till milk gets half of the quantity.Then add condensed milk and stir and get it boil.Once it start solidfy add mango pulp, milk powder and sugar if u feel sweetmess is less. Taste the mixture before u add sugar.Now continous stir on medium flame Till it start leaving the pan.Once done spread it in plate grease with butter.Garnish with almonds rasions and let is cool down and make the cut with the knife.Once it is cool down put the tray in freeze for 3-4 hrs to set.

It will not be fully set as a burfi or a piece as we didnt add khoya or mawa or evaporated milk... it will be semi solid and liquid.You can eat with spoon also if it is not setting as a piece.Once you ate then keep rest again in freeze.This sweet will be good for 3-4 days in freeze.

Note :- Do continous stiring after adding mango .. as mango pulp contains water so while heating it will split from the pan.So if you do continous strining.. it will nt cm.out from the pan and spread.. be carefull and cook away from children ☺😊...
