Apple Burfi


Hey All Lovely People Out There !!!!

Festival Season Started with Sharavan .... Now there some or other auspicious day till Diwali for each and every religion in India... So first festival which every one looking forward now is.... Rakhsha Bhandan :) :).... Or RAKHI .... Raksha Bandhan is a Hindu festival that celebrates the love and duty between brothers and sisters... Its a way of expressing love by the sister for her brother :) :) ... Every girl wait's for this festival to get lots of love and ofcourse gifts and pampering by his brothers :) :)... Its just a pure form of celebration of love between sister and brother .... 

On Raksha Bandhan, sisters tie a rakhi (sacred thread) on her brother's wrist. This symbolizes the sister's love and prayers for her brother's well-being, and the brother's lifelong vow to protect her.On this day so many sweets and dishes made to please brothers by there sisters... These festival is beyond of ages... means every person celebrates this festival... either old or young... girl or boy... poor or rich... no discrimination on this festival.... 

As we talk about sweets so many sweets comes in mind :) :) ... So today I came out with a sweet delicious... treat to mouth... a simple and easy sweet "APPLE BURFI" .... Its a easy peasy sweet dish which will be done in no time and will be a unforgetable treat for your beloved ones... So lets start the preparation ...




Ingredients :- (This recipe will give 10-12 pieces)

2 medium sized apple grated
1 cup of grated coconut(frozen or fresh)
5 tsp of milk powder( sweetened)
1/2 tsp of cardamom powder
3 tsp od sliced almonds for garnishing
sugar if required
ghee for greashing the plate

Procedure :-

In a pan heat the coconut for 2-3 minutes.Then add milk powder and again stir it for 4-5 mins.Add grated apple and cardamom powder.And again stir it till it came for the consistency which can be set as burfi.Jst taste at this stage for sugar content.If you required you can add grounded sugar as per your taste.Now grease a plate with ghee.And spread the burfi properly to the plate.Garnish with almonds or nuts of your choice.And let it rest on kitchen platform till it comes to room temperature.Once cool down.Keep in freeze for an hour or more to set.Then cut into shape of your choice.Enjoy with your family and friends :) :)

Note :- This burfi's are good for 4-5 days in freeze .

Tangy Bread Pinwheel Dhokla


Hello One and All

Rainy season is on full swing :) :) ..  This season is favourite of mine as the fragnace of wet soil... makes me crazy... Also sitting in balcony ... drinking tea ... and watching the rain... wow that's the perfect moment...  but one minute... something is missing.... in this perfect moment... can anyone tell me ...what I am missing here .... any guesses.... hmm ... let me tell you.. to make this moment The perfect... we need a hot hot snack go with the tea :) :)...  What say guyss... agree with me :) :) on this ....

Most of the time we end with making wither Pakods.. all time favourite of all or khaman Dhokla .....I know nothing can match the Pakods with tea in raining season... But we need a change also.. As change is needed always... Also pakodas are too oily... I already posted recipes like Phoa Cutlet , Spinach Muthiyas , Bread Uttapam , etc to blog... which also healthier options .... :) :)

Yesterday in night my friend call came to invite me on her baby 100 day celebration.Then it was decided between our four families living here... that we will bring something from home also.... Not a heavy but a light snack or side dish... As it was decided on spot and in night.... I was thinking what to make... Also no time to go for buying anything ... becoz next morning my husband went office ...and here in US... we need a car to go anywhere... So then I need to come up with something from the ingredients available at home only...  I was thinking and thinking... first I thought to make Khaman dhokla... Then I dropped plan as.. few daysback only I made on a friendship day meet... Then I thought of making Kachories.... but here in US its summer season.. so hot... so thought may not be good for health... and then my eyes went towards the corner of my kitchen...and I saw a new big loaf of bread is lying untouched... Then I decided to make something with bread... And finally made this yummy tangy Bread Pinwheel Dhokla... :) :)




So lets start with this yummy Snack :)

Ingredients :-

9 Bread Slices
1 cup of Tamarind chutney (I used store brought chutney)
1 cup of Mint Coriander Chutney.
1 cup of gram flour or besan
1/2 cup of curd
1/2 tsp of cirtic acid(If you do not have cirtic acid you can use 2 tsp of lemon juice)
1 tsp of salt
1 tsp of ginger paste
1/2 tsp asfotedia
1 tsp of green chilly paste(optional)
1/2 tsp Baking Soda
2 tsp of mustard seeds
4-5 green chilly cut in the vertical
5-6 Curry leaves 
4-5 tsp of oil
2-3 dry red chillys(optional)
For garnishing Coriander leaves
some water to make a batter for Dhokla

Procedure :-

Take 3 breads at a time.Firstly roll the bread with roller to make it thin.If you want you can remove the sides of bread.Once you made all the 3 bread thin , apply first tamarind chutney to one side of all the 3 bread.Then on it apply mint coriander chutney above tamarind chutney.Now place one bread over another in a such a way that u can make a roll shown in the pic.You need to place one bread over another in such a way that the second bread should cover only 1/2 portion of first bread.Then make a roll on the plastic polythene... you can use salt or papad poylthene.Just tightly cover the rolls and place it in freeze for an hour.Make all the 3 rolls in this way of total 9 breads.








Now after one hour take out from freeze.And with he help of knife cut the pinwheels from the rolls.As shown in the below pic you need to cut the pinwheels and arrange in the plate.







Once all the pinwheels done prepare the dhokla batter.Minwhile place the container with water for steaming.In a bowl add besan , salt , ginger and chilly paste , asfotedia , cirtic acid and curd.Mix it will to avoid lumps.Once mixed add some water to bring out to dhokla batter consistency.I used the Idli moulds to steam my dhokls.You can use normal dhokla tray also.Now add the baking soda .. give a final stir to the batter.So I just grease the mould.I dipped one one pinwheel in the batter and then place in ildi moulds.Steamed for 20-25mins.... In between check by inserting knife.. If it comes out clean.. your dhoklas are done.Now put a pan.Add oil.Once hot add mustrad seeds.Once mustard seeds pops up add curry leaves and green and red chillys.Once they are cooked in oil add some salt.And finally add our bread pinwheels.Give a stir.Cook it for 2-3mins on meduim flame.Serve hot after garnishing with Coriander leaves with sauce or chutney of your choice :) :)




Everyone liked it at my place... My friends were not believing that bread is inside the dhoklas :) :)..

Tips :-

1) Add baking soda at the end when you are just going to steam the dhoklas.

2) If you are having batches to do.Add Baking soda only to small part of the batter which can go in one go to steam.For other batch add afterwards.In this way you will get good fluffy dhoklas.

3) Instead of Steaming you can also go for frying this dhoklas... If you are frying then don't add curd or citric acid in the mixture... Just take a bowl of besan with sal and ginger green chilly paste.With a pinch of baking soda.And you are good to go for yummy Pakodas :) :)

4) You can also fry this Dhoklas with onions and tomatoes.And at the end you can also sprinkle some cheese :) :)

Pav or Indian Bread

Hello All

Being away from our native place or from our country... the most important thing we miss is food... either home cooked mom's food.. or the speciality of the place we grown up... like bengali people miss Rashogullaa... South people miss there style curries and dosa's idli... Indori people like me miss the spicy yummy chaats.. tikkiss.... Mumbai people miss the Street side food like Pav bhaji.. Bhelpuri.. etc...



Mostly in India now a days.... in any part of it.. we will get all types of regional food... now its not a big deal.. yeah it may not be authentic taste as per your place... but we can get taste of every corner of India at every place... Problem happens when we move away from India... We miss mostly the Street food... made on big Tawa's... with lots of spices... While writing only I am imagining and all pictures are floating in my mind... and my tongue is dancing :) :)...  After coming to US I realized all this things... how badly we miss real street food here... Even though Indian restaurents are there...but the authentic taste you can't get here... then the solution is the only one.. Prepare at home as per the taste... Some how atleast we can full fill our desires :) :)... 



So this time I tried the famous Street Food of Mumbai chopatties :) :)... PAV BHAJI... :) :)... After reading this everyone who have been to Mumbai and tasted this.. would be drolling with lots of memories of this yummy dish or Snack ... I know... Bhaji is easy like normal curries..and can be prepared easily by anyone.. if you had a pav bhaji masala to give you the Bhaji taste... The problem is the PAV's to be eaten with bhaji... Normal bread will not give the feeling of eating pav... So here I come with the recipe of home made Pav... and easy tried and tasted recipe :) :)... Pav's can also be used for making VADA PAV... another great Snack of Mumbai... So one day we can make PAv bhaji with it and another day we can make VADA PAV with this PAV's... Let's start preparing the yummy milky PAV's :) :)



Ingredients :-

2 cups all purpose flour
1 cups luke-warm water + 1/2 cup for yeast
3 teaspoon instant Yeast
2 tbsp butter
2 tsp Salt
2 tbsp Sugar
1/4 cup milk powder
1/2 cup warm milk
2 tsp of Olive oil
Extra flour for dusting



Procedure :-

In a bowl add 1/cup of warm water , 1 tbsp of sugar and yeast.Keep aside for 15-20mins ...covering bowl with a wet cloth.In mean time in another big bowl take flour, salt , sugar , butter and mix it.Now once yeast risen properly add it to the mixture of flour.With the help of Spatula mix it well.Add water as required.First it will be a sticky dough.Sprinkle some flour as needed.Then once it come all togther.. you can use hand to make a dough.Now sprinkle some oil on the upper surface and let it rest for an 1/2 hour.Cover the bowl with a wet cloth,After 1/2 an hour you will see its risen.Again mix once with hands.And let it rest for an 1/2 hour.Then take the dough toh the kitchen counter.Flatten it with hand on kitchen slab.Cut the dough in to two parts horizontal.... Roll it in a drum from.With help of knife the cut the pieces of your side.Take one one piece.. pat with the hand... and  make a ball type shape... Make all the balls in this way... In greased baking tray arrange the pavs in a manner that they stick to each other... So that they will not fluff horizontly but vertically.. So you will get a proper puffed pav :) :).. Now let it rest again for an hour on kitchen counter.,  Preheat the oven on 375F... Before keeping pav for baking.Sprinkle generous amount of milk on each pav.. Bake the paw for 20-30mins till you see the yummy brownish color on PAV.Cool it on wire rack... And enjoy yummy Pav with bhaji or with VADA Chutney... Your's Choice... :) :)

Malpua


Hello All

Rainy season going on its peak now days... And with this season holy months also started for many religions... and from yesterday a very spiritual and holy month for all the Hindu's known as Sharavan started... All will worship with whole heart and mind lord Shiva... Sharavan month starts with the end of Asadh holy month... So last day of this month celebrated as big Festival known as Guru Purnima... Guru means teacher... This festival is traditionally celebrated by Hindus, Jains and Buddhists, to pay their respects to their teachers and express their gratitude.

On this auspicious day I thought to express my gratitude to my first GURU... that is my MOM... She is the one who taught me everything in my life... took my great care..and made my childhood worth to remember... I saw her sacrifices for me and my sister... From her way of living her life we learned a lot... Today I am married.. leaving away from her.. miss her a lot... food made by her is so so yummy.. I daily miss that food.. but as god grace I think I also got her some of the talent.. and now with her blessings and teaching :) :) I also started preparing some of her dishes :) :) ...... So thought to make her happy by making one of her own signature dish...and that too sweet dish :) :)... yummy MALPUA... and yes one more thing I want to share you all..with my mom who is awesome cook.. my dad also is good cook :) :)...So I am blessed with two great cooks... my papa prepares awesome curry's and chutneys :) :) ... Aww now I am getting senti :(... pardon me...

Lets move on.. So today I am sharing my all time favorite and loved sweet MALPUA recipe... 




Malpua is an Indian sweet dish that is basically a sugar syrup soaked pancake prepared from a batter of flour, khoya , milk and cardamom. Malpua are usually fried in ghee till crisp along the edges, soaked in sugar syrup, garnished with pistachios and served warm with a topping of Rabri or simpply just with sugar syrup garnished with almonds or cashews :) :) ... So yes this is a full calorie gain sweet..but festivals par chalta h... so don't think much and prepare it :)

Ingredients

1 cup maida or all purpose flour
1/2 cup grated mawa or khoya
1 cup warm milk
1 + 1/4 cup water
1 cup sugar for making sugar syrup and additional 2 teaspoon more to add in batter
a pinch of baking powder (optional)
1 tsp of cardamon powder
some chopped almonds , cashews
1 + 1/4 cup of ghee to fry
1 teaspoon fennel seeds(optional)

Procedure

In a bowl take grated mawa and mix 1/2 cup of warm milk to it.Mix it properly as all the lumps should go.Then slowly slowly add maida to it.Now add remaining milk to get a pouring batter consistency with 2 teaspoon sugar and a pinch of baking powder(optional).Mix it well.If you want add fennel seeds to batter(optional)... Now let the batter to rest for 15 mins.




On the other side on gas pour 1 + 1/4 cup water and 1 cup sugar and let it boil.We need sticky consistency.Once boil comes drop in a plate the sugar syrup and check with finger that it becomes sticky.If yes... Switch off the gas and add cardamon powder to it.

In a pan which has big base heat the ghee on medium flame.Once ghee is hot pour the batter as small pancakes... let it cook on one side till golden brown on medium flame.




Then flip the malpua with the help of two spatula with great care...These are very soft and delicate beautuies...so need to take care while flipping otherwise can break..Once done brownish in color from both the sides...Take out from Pan by pressing the extra ghee from them.. And drop in sugar syrup... Let it in sugar syrup for 10-12 mins till it soaks the sugar.. Then take out in a plate garnish with chopped almonds and cashews... And enjoy either hot or cold with rabri :) :)
