Suji or Rava appams is a very light dish which is made from suji. For making this you need a special pan known as appam pan. This pan is very good for cooking with very less oil.You can also prepare kofta's , pakodas or dahi wadas with very minimal oil.It can be easily purchased from market or online.Below is the pic of appam pan:-
So let's start with the recipe. Its very easy to make.
Ingredients :-
1 + 1/4 cup suji or rava
1/2 cup curd
2 medium size onion finely chopped( optional)
3-4 green chilly finely chopped
1/2 tsp cumin seeds
1/4 tsp red chilly powder
1/4 tsp turmeric powder
salt to taste
1/2 cup of coriander leaves(optional)
2 tbsp of oil
1/4 tsp of baking soda
water to make batter in right consistency
Procedure :-
In a bowl mix suji, curd and salt.Add some water if you feel batter is too thick. It should be like pakoda batter. Not too thin or too thick.Late it rest for 15-20 minutes. Now add onions, green chilies, coriander leaves and all other masalas.Give a nice mix.Keep appam pan on medium high heat.Once heated, with the help of spoon pour 2-3 drops of oil in every block of pan.Now fill the batter in appam pan.Cover the pan nicely.Lower the flame to medium. After 5 mins check for the appams. If done from the down side.Flip them with the help of spoon. And sprinkle some oils on corners if you want them to become crispy. This time after flipping don't cover the pan.Let it cook without covering.
After 5-7 minutes check if its cooked properly from both the sides.

Notes:-
1) You can add veggies of your choice in the batter.Like finely chopped carrot , cauliflower or green peas.
2) If you don't have appam pan , don't worry. You can make like pan cakes on tawa or pan. First pour some oil on nonstick tawa or pan and once hot sprinkle some mustard seeds and curry leaves.Once splutter pour one big spoon batter on pan and make it spread on pan.Cover it .Let ot sook onside and the flip it.This time don't cover it. If you want you can drizzle oils on corner to make it crispy.
